Millet Sushi & Open Sesame


Raw Millet Sushi
Remember my LOVE at first bite, well the second one was even better! A delight made in few minutes that will leave you rethinking about the cooked rice version. A nutritious and filling combination for light digestion and all you can say is " when I am going to make it again?"
Ingredients:
For 8 sushi:
1 cup organic raw millet
Nori sheets
1 Carrot
1 Cucumber
Some Purple cabbage
2 to 3 Oyster mushrooms
Some  kelp flakes
Organic Nama Shoyu
If you are new to rolling sushi, here is how!
First soak the millet in 1/2 cup mineral warm water (with a pinch of sea salt) for 1/2 hour. Once water absorbed, the millet should be tender and not crunchy.If not add water and wait till it's softer & puffier.
Shred vegetables. Place the millet where you would put the rice on your nori sheet. Add the ingredients nicely one at the time without overloading the sheet. Only your eyes would tell you how much to put in there. If needed follow the link on how to place the veggies and cut the Nori.
Enjoy every bite with a drizzle of Nama Shoyu.
You might end up with some extra shredded veggies, eat them ;-)

Raw Hummus
In my last hunting trip I was delighted to find raw sesame seeds, the sesame chocolate truflles was what I made 1st with it. Raw Tahini came second, raw Hummus next!
 
Raw Tahini recipe
 Raw sesame seeds, organic olive oil & sea salt.
1/4 cup olive oil to 1 cup sesame seeds
Blend together oil, sesame & salt for few minutes, the result is sesame seeds paste.
It is worth making tahini in bulk to reduce waste as the sticky paste is difficult to empty cleanly from your food processor. This is the proportion of oil to sesame seeds to use, increase the quantities to suit your needs

Raw Hummus recipe
2 cups raw chickpeas soaked over night in water
1/2 cup raw Tahini
Organic olive oil
Juice of 2 lemons
4 cloves garlic
Sea salt
Rince the chickpeas to wash out the "soaked chickpeas" smell
Put it in the blender or food processor with Tahini, oil, lemon & salt
Blend well till the mixture is creamy.
If desired make it less or more lemony, garlicy oily or "tahiny"
It's up to your taste buds
Sprinkle with paprika or sesame seeds. have fun! Use it for dips with veggies or make a tortilla!

Refrigerate and enjoy with moderation
I have no idea how long it keeps in the fridge.
A week sounds reasonable?!

The millet sushi looks very intriguing, something I want to try. But please, what is raw hummus? I make my hummus from canned chickpeas.

Judy;-) Hope you give it a try!
The canned chickpeas are pre-boiled & preserved!
Raw hummus is made from raw chickpeas that start off very hard & must be soaked overnight, which softens then enough to be blended & keeps all nutrients without any additives.
